Spiced Banana bread

126g softened butter

1 cup brown sugar

1 splash vanilla extract

1 cup Greek yogurt

2 tsp cinnamon

1 tsp ginger 1 tsp cloves

1 tsp baking powder

1 tsp baking soda

3 small bananas

4.5 cups plain flour

2 eggs

1 tbsp chia seeds


Preheat oven to 180deg. Prepare loaf pan with baking sheet. Mix butter and sugar together until creamy. Add in vanilla and one egg at a time beating in between. Add in banana and mix until well combined. Add in your dry ingredients and finish off with the Greek yogurt. Pour into your baking tray and sprinkle chia seeds on the top before baking in the oven for 40-45minutes. Enjoy with butter while it’s warm, then slice and store in zip lock bags in the freezer perfect to pop out on busy school mornings and add to school lunch boxes!
