Choc Chip Cookies

125g room temperature butter

1/2 cup raw sugar

1/2 cup brown sugar Pinch salt

1 family block Cadbury milk or dark chocolate roughly chopped

1 tsp vanilla extract

1 egg, room temperature

1.5 cups plain flour

1/4 tsp baking soda


In your standing mixer, mix butter and both sugars until fluffy. Add vanilla and egg and mix. Add in all your dry ingredients and mix until just combined. Do not overmix. Lastly add in your chocolate and fold in. Place in the fridge to chill for at least 30 minutes. Preheat oven to 180deg. Scoop balls of cookie dough onto a baking paper lined tray, spaced apart. Bake for 12 minutes for a chewy cookie. Allow to cool (if you can) and enjoy! Tip - you can freeze the dough to use whenever you feel like cookies without the preparation. Form into a log and wrap in baking paper then securely in glad wrap. Place in the freezer for up to 3 months.
